Today we are going to share a very simple yet a perfect recipe of cheesecake and that would be the best and my all time any kind of cake recipe ever;) and I am hoping that you will give it a try and you will enjoy it on weekend with your loved ones.
Here is a list of Ingredients for your Crust:
- I am using graham crackers, and you need about 30 squares of it.
- Half tablespoon ground cinnamon.
- One stick malted unsalted butter.
- Now we will get the ingredients for the Filling.
- You need 4 medium blocks of cream cheese and keep it in room temperature for like 3-4 hours.
- 4 large eggs.
- Vanilla extract.
- Lemon zest.
- Sour cream.
Now these are the ingredients you need for topping:
- Granulated sugar
- Corn starch
- Lemon juice
This recipe was handed down to me from my mother so I am not changing anything to get the same flavor;) so we will start with crust, take all the crust ingredients in a bowl together and mask it with a fork until evenly and then moisturize a 9-inch spring form pan with non-stick cooking spray and then press the mixture over the bottom and it is always good to use your finger or the smooth bottom of a glass for that, you need to press as perfect as possible to get the right base and then put the pan in refrigerate meanwhile preparing the filling.
Now we will prepare the filling and for that we will take a large bowl and beat the cream cheese on low speed for 1 minute just until smooth and a bit fluffy now start adding sugar and beat until creamy, now keep adding the eggs, 1 at a time, and continue to slowly beat until combined well.
Now mix vanilla and the lemon zest in a bowl and then blend in the sour cream and meanwhile the first mixture is well mixed, not too much though since we don’t want too much air in it, just slightly fluffy now add sour cream in it and vanilla mixture and mix well and then pour filling into the crust-lined pan and smooth the top with a spatula and give it some time to settle down.
Now set the pan on a double piece of aluminum foil and fold up the sides to keep the water from seeping into the seams of the spring form pan and then set the cake pan in the large roasting pan and then pour boiling water into the roasting pan until the water is about halfway up the sides of the cheesecake pan and put it in preheated oven on 325 and then decrease oven to 300 and now we will bake it for almost 80 minutes now take it our cause we don’t want an overcook cake do we? And remember we don’t do toothpick test with this cakes because this will make a crack in it.
